The 18th BRICS (Brazil, Russia, India, China, and South Africa) summit is being held in New Delhi's Bharat Mandapam.
One of the star dishes on its menu is 'gucchi marmik,' a traditional Indian dish from the Himalayan region.
The dish uses highly prized Himalayan morel mushrooms as the base, along with asparagus, saffron, raisins, and almonds.
These mushrooms can't be grown commercially, making them some of the most expensive in the world.
As they grow entirely in the wild, they absorb many minerals, bioactive compounds and vitamins, and is a great source of plant-based iron.
They also have high levels of natural vitamin D, B-complex vitamins, and antioxidants, and are excellent for weight management and diabetes.
