Elaneer Payasam

Elaneer or tender coconut water is a favourite beverage among the Keralites. This Vishu, try blending the goodness of elaneer with milk to make this wonderfully unique payasam.

Ingredients
2 litres of milk
1€“-2 litres of tender coconut water / elaneer
2 cups tender coconut pulp
1 cup coconut milk first extract
½ kg jaggery
1 tsp cardamom powder  

Preparation
Boil the milk and reduce it to ¾ of its quantity
Rest the milk and wait until it cools down to room temperature
Meanwhile, powder jaggery finely and mix with the coconut water. Strain the mixture with a strainer
Whip the coconut pulp lightly taking care not to beat it to a pulp
Mix the whipped pulp and coconut milk together with coconut water and jaggery mixture
Mix all of this with the milk that has been kept aside, and add the powdered cardamom
Serve chilled
