Kaipola

Kaipola is a sweet dish from the Malabari cuisine and is much loved for its simple yet delectable taste.

Ingredients
Coconut oil, as required
1½ tbsp chopped cashew nuts
1 tbsp raisins
1 banana chopped into squares
3 eggs
¼ cup sugar
2 pods of cardamom powdered
2 tsp ghee

Preparation
Heat oil in a pan and fry the dry fruits
In the same oil fry the banana pieces and mix with the cashew nuts and raisins
Combine the eggs with the sugar and beat well
Grease a dish with some ghee and pour a little of the egg mixture. On top of this place the banana and dry fruit mix. Over this pour the remaining egg mixture. Cook this using a steamer or even try baking it as an alternative
