Ingredients
1 kg pork (cut into small pieces)
2 tbsp chilli powder
2 tbsp coriander powder
1 tsp turmeric powder
5 -6 dried chillies
Coconut shards
5 green chillies (crushed)
Ginger (finely chopped)
Garlic (finely chopped)
Black pepper (crushed)
250 gm yogurt
5 Malabar tamarind
2 onions
2 tomatoes
2 cinnamon sticks
Coriander leaves to garnish
Preparation
Clean the pork bits by washing it in lemon juice
Heat a pan and add chilli powder, coriander powder and dried chillies
Roast well
When the spices begin to release its aroma, add the coconut shards, crushed black pepper and finely chopped ginger and garlic
Sauté well
Add salt as required and turn off the heat
Add yogurt into this masala mix
Marinate the pork bits in this masala-yogurt marinade and keep it in the fridge for at least 30 minutes
Heat oil in a pan
Add the marinated pork bits
Sprinkle the sliced onions on top
Cook on low flame with the lid on
When the steam begins to come out, add the Malabar tamarind
Cook for another 40-45 minutes
Add the diced tomatoes and stir well
Garnish with chopped coriander leaves.
