Instant sambar powder

Sambar can be an ever-ready dish, provided its ready-to-mix powder is at hand in the kitchen. Here's a guide on how to make your customized sambar powder.

Ingredients
½ cup tur dal
2 tablespoon chana dal
1 tablespoon Bengal gram (pottukadala)
1 tablespoon rice
½ cup fresh coriander seeds
10 dry red chillies
1 teaspoon mustard seeds
1 teaspoon fenugreek
1 teaspoon pepper corns
1-2 tsp asafetida
½ teaspoon powdered turmeric
1 tablespoon powdered Kashmiri chilly
1 tablespoon tamarind

Preparation
Fry a small ball of tamarind and set aside
This can be done in a frying pan or aluminium pan
If a non-stick pan is preferred, see that it€™s an old one.
Heat a pan, pour in ½ teaspoon of oil and add tur dal, chana dal and Bengal gram
Fry till they turn golden brown
Separately fry the coriander seeds and red chillies
Add in the pepper corns and fenugreek
Roast on a medium flame
Set this aside
Now roast the rice till it turns crisp and brown
Fry the asafetida also
Grind the roasted ingredients along with the powdered turmeric, Kashmiri chilly, and fried mustard seeds
The sambar powder is ready!
