If all goes well, passengers of Kerala's Vande Bharat trains will soon be able to enjoy a wide variety of dishes during their trips. And this does not include the main course items, but desserts too. From kesari and gulab jamun to muffins and custard, travellers can choose their favourites soon, said the caterers. Meanwhile, the railway is also trying to bring in more airline caterers and brands to serve food on trains. 

Casino Air Caterers and Flights Services (CAFS) CEO VB Rajan said that a discussion is underway with IRCTC (Indian Railway Catering and Tourism Corporation) on which meals should be included in the menus of Vande Bharat trains from Thiruvananthapuram to Mangaluru and Kasaragod. 

The changes and new dishes
Apparently, the authorities are also planning to make the curries served in trains thicker, to prevent them from spilling onto passengers' clothes. For breakfast, palappam and veg kuruma, and idiyappam and egg curry are under consideration. For lunch, Thalassery dum biriyani and Malabar dum biryani along with meals; pazhampori, parippuvada, unniyappam and neyyappam for snack time; gulab jamun, muffin, banana custard, fruit trifle as dessert options are also short-listed. C Gunasekhar, the chef at CAFS, said that, in addition to the regular items, they are also trying to offer Malayalis their favourite foods. 

Kochi-based CAFS took over the catering for the Mangaluru Vande Bharat, along with the Kasaragod Vande Bharat, from December 16. They are the first airline caterers in India to provide in-train catering. Haldirams and Sarovar Hotels Limited have also recently begun railway catering.
