Sweet roti with jaggery filling

A Maharastrian specialty, the puran poli is delicious sweet roti with jaggery filling and complementary spices.

Ingredients
1 cup split Bengal gram
2 tsp ghee
1 tsp dry ginger powder
¼ tsp nutmeg powder
½ tsp cardamom powder
1 tsp fennel powder
1 cup jaggery grated
1 ½ cup wheat flour
½ tsp salt
1 tsp oil or ghee for the poli dough
½ tsp turmeric

Preaparation
Wash the Bengal gram well and pressure cook the dal after soaking for a few hours. Keep this aside
Heat ghee in a pan and add all the dry spice powders
To this, add the jaggery and cooked dal and mix well
Cook this on a low flame till all the water has completely evaporated and the mixture is quite dry. This is the 'puran' or filling
Add the turmeric, ghee and salt to the wheat flour and make a chapati like dough by kneading it with a little water
Keep this aside for 15-20 minutes and then make medium sized balls from the dough
Make a hole and place a little filling in the centre of the ball, cover it and flatten it using a rolling pin
Form it into a chapati by sprinkling a little flour over it
Heat a pan, add some ghee and cook the puran poli till both its sides turn a nice brown colour
You could also add some maida, instead of it making the dough entirely with wheat flour
