Vegetable Pulao

Vegetable Pulao

The pulao or pilaf is among the best loved dishes in Asian cuisine. Get them vegetables, toss them into the pulao, and bring to your table, one of the finest meals ever!

Ingredients
2 glass biriyani rice
1/4 cup oil
2 tbsp ghee
1 onion chopped
1/2 cup fresh green peas
1/2 cup cauliflower chopped
1/2 cup potato finely diced
A few curry leaves
1 inch piece cinnamon
4 cloves
A few coriander leaves chopped
Salt to taste

Preparation
Wash the rice and drain.
Heat the oil and ghee together in a pan. Fry the onion and keep aside. 
Add the green peas, cauliflower, potato, curry leaves, cinnamon and cloves in the remaining oil and stir-cook for two minutes.
Pour five and half glasses of water and stir after adding salt. When the water begins to boil, add the rice stirring all the while. Cover the pan.
When all the water is absorbed, turn the rice again and again.
Transfer the pulao to a plate and garnish with the coriander leaves  and fried onion. 
Serve hot.
