LPG shortage is the latest problem creeping into the lives of the common man following the Israel-US-Iran war. While the govt is taking various measures to ensure that at least our home kitchens aren't affected, it is important to use the available fuel with care and to try healthy, affordable alternatives. The immediate solution to the LPG shortage at our homes is to use induction cooktops. According to reports, sales of induction cookers are also increasing rapidly following news of an LPG shortage. While it is nothing new, it isn't too familiar enough for everyone to use them efficiently and in a healthy manner. Here are a few best practices by the American Oncology Institute (AOI) for healthy cooking with induction cooktops.
Healthy cooking practices
1) Check whether your pans and other cookware are compatible with your induction cooker. Ensure they sit properly on the surface to minimise electromagnetic field (EMF) generation. Various studies have shown that the low-frequency EMF created by induction stoves are generally safe. Even microwave ovens, vacuum cleaners, hair dryers and electric shavers have comparatively higher EMF levels, says AOI. Opt for stainless steel, cast iron, and non-stick (undamaged) pans as far as possible.
2) The EMF exposure also decreases if you stand at the right distance from the stove. Generally, an arm's length from the stove is safe and ideal for cooking.
3) Select the right heat settings for various dishes. Vegetables, dal, curries, idlis, milk, and more can have different settings as per your stove's brand. Follow the manufacturer's instructions to avoid extra heat and overcooking.
4) Before you start cooking, make sure the cooktop is dry, dust-free and clean. Greasy cooktops can consume more energy.

1) Induction cookers heat up cookware and the food much better than other methods; they cook food faster. For instance, water can be brought to a boil up to 40% faster on induction cookers than on gas or other electrical cooking methods.
2)As they are free of indoor air pollutants, unlike gas cookers, they won't exacerbate respiratory conditions.
3)Thanks to their built-in safety measures, they will also automatically shut off if they don't detect a pot or pan on top of them. This means there is a lower risk of burns as well.
