Butterfly pea flower lemonade

Butterfly pea flower tea commonly known as the blue tea has been quite a sensation among tea lovers recently. It a caffeine-free herbal concoction which is made by infusing the sankupushpam flower or Asian pigeonwings that is abundantly available in our backyards. Blue tea is extremely popular in many South East Asian countries like Thailand and Vietnam.

This could even be enjoyed as refreshing lemonade by adding honey and lemon juice. The stunning blue colour is what makes this herbal lemonade stand out. Here is a special recipes of blue tea lemonade prepared by Fasil Shahid, a native of Malappuram.

Ingredients
10 butter pea flowers
1 cup water
2 tbsp lemon juice
Honey as required
Ice cubes as required

Preparation
Boil the water and infuse the cleaned flowers
Take out the flowers after the water has turned blue in color
Allow the water to cool down
In a serving glass add honey and lemon juice
Mix well
Fill the glass with ice cubes up to the rim
Pour the blue water into this glass
The colour will now change from blue to an attractive purple shade when the water mixes with lemon.
