Chocolate pudding with sea salt

Make your Christmas desserts sweet and salty with this pudding. Just a pinch of sea salt, gives this dessert an interesting flavour. This simple recipe can also be your last-minute fix when guests come unannounced.

Ingredients
¾ cup white sugar
2 ½ tbsp corn flour
¼ cup (25 gm) cocoa powder
¼ tsp salt
1 2/3 cup milk
1/3 cup heavy whipping cream
3 large egg yolks
90 gm semi-sweet, good quality chocolate (finely chopped)
1 tsp vanilla extract
1 tsp unsalted butter
½ tsp sea salt

Preparation
In a mixing bowl, whisk together sugar, corn flour, cocoa powder and salt
Then add in about 1/3 cup milk to make this a paste
Add the egg yolks
Pour the remaining milk and cream to a wet saucepan and bring the mixture to a light boil
Slowly pour this into the egg mixture
Pour this concoction to a clean saucepan and cook on medium heat, stir continuously
In about 3-5 minutes it will start to thicken
Remove from heat and run through a strainer
Add butter, chopped chocolate and vanilla extract
Mix till smooth
Pour into glasses and top with salt and whipped cream
Keep to set and enjoy warm or cold.
