Pavalanga and chemmeen thoran

Snake gourd and prawns thoran (stir fry) is a perfect side dish for an elaborate lunch. The intricate flavours of this unique dish are sure to excite your taste buds. Ingredients
1 medium sized snake gourd
250 gm prawns
1 tbsp chilli powder
½ tsp turmeric powder
4 shallots
5 cloves garlic
½ cup grated coconut
2 sprigs curry leaves
Coconut oil as required
Salt as required

Preparation
Cook the prawns with turmeric powder, chilli powder, and salt
Meanwhile heat coconut oil in another pan and sauté crushed shallots and garlic
Add the chopped snake gourd and mix well
After this has cooked well add the grated coconut, curry leaves, and salt
Give everything a good mix
Into it add the cooked prawns
Cook for 5 minutes with the lid on
If you prefer to retain the green colour of the snake gourd, do not overcook them.
