Baby corn fry

Baby corn or corn, packed with nutrients, can be eaten raw or cooked. It is an unavoidable item in mixed vegetable stir-fries. Batter-coated baby corn fry is incredibly easy to prepare and is the perfect snack to enjoy during the monsoons.

Ingredients
400 gm baby corn
1 tsp Kashmiri chilli powder
½ tsp lemon juice
1 tsp salt
2 cups all purpose flour
2 tbsp corn flour
1½ tsp chilli powder
1 tsp salt
Bread crumbs as required
Oil to fry

Preparation
Wash the baby corns and pat dry using a soft cloth
Marinate the baby corns with Kashmiri chilli powder, lemon juice and salt
Prepare a batter by mixing the all purpose flour, corn flour, chilli powder, salt and water
Dip the baby corns in the batter
Roll them in bread crumbs
Pop them in the freezer for at least 2 hours
Deep fry in hot oil
Serve hot with tomato ketchup.
