Iftar special: Milk pathiri

The good old pathiri is still the most favourite item to have for iftar. Pathiri lovers would say that soft pathiri dipped in creamy coconut milk is one of the most spectacular combinations. Interestingly, you could tweak the recipe a bit and make delicious fish or beef pathiris too. Check out the recipe of milk pathiri, a tasty snack made with coconut milk.

Ingredients
1 ½ cups coconut milk
¼ cup all-purpose flour
1 tbsp sugar
3 eggs
2 tbsp sugar
½ tsp cardamom powder
Ghee
Cashews and raisins as required

Preparation
Take coconut milk, all-purpose flour, 1 tbsp sugar and a pinch of salt in a bowl
Mix into a soft batter without any lumps
Meanwhile, beat the eggs with 2 tbsp sugar and cardamom powder in another bowl
Set it aside to be used later
Heat ghee in a pan
Fry the cashews and raisins
Keep them aside
Boil some water in a regular idli steamer
Grease a plate with ghee and place it in the steamer
When the water in the steamer has boiled well, pour a ladle full of batter into the greased plate
Close the lid and cook for 2 minutes
After 2 minutes, open the lid and pour in the egg mix on top
Garnish with fried cashews and raisins
Sprinkle some ghee too
Cook for 2 more minutes with the lid on
Repeat the layers until the ingredients are over
Finally, cook for 8 minutes
Cut into pieces after the pal pathiri has cooled down
Enjoy the melt in the mouth milk pathiri.
