Check out this healthy millet dosa recipe shared by an international food technologist

The storehouses of healthy fibres, millets are a great way to start your day. Including dishes made with millet in your daily diet would lower cholesterol, according to experts.

The recipe for this extremely nutritious and tasty finger millet dosa is shared by Durga Chellaram, who is a renowned food technologist. She often associates with many international food brands, helping them develop recipes that are healthy and appeal to the taste buds of their customers. Check out her recipe for millet dosa which could be cooked in a jiffy.

Ingredients
1 cup finger millet powder
¼ cup rice flour
2 tsp chopped green chillies
1/3rd of a cup of thick sour curd
1 ½ cups water
Salt as required
1 small onion (finely chopped)
1 tbsp finely chopped coriander leaves
1 tsp oil
1 tsp mustard seeds
1 tsp cumin seeds
5 curry leaves
1 tsp oil

Preparation
Blend the millet powder, rice flour, chopped green chillies, curd, water and salt in a mixer jar
Pour the batter into a bowl and keep aside for at least 30-45 minutes
Into it, add chopped onion and coriander leaves
Heat oil in a pan
Splutter mustard seeds
Roast cumin seeds and chopped curry leaves
Pour this tempering into the batter
Mix it into a loose batter
Grease a hot pan with some oil
Pour a ladle full of batter
Spread into thin crepe; you need not use a ladle to spread the batter as it is loose
Sprinkle a teaspoon of oil on the dosa
Flip and cook until the dosa is crispy
Serve the hot millet dosa with 'gun powder' (chutney powder) mixed in fresh ghee or coconut chutney.
