This year, bring that old-world charm back into your kitchen with a foolproof recipe from Silvy, founder of Silvi’s Creations Kochi. Her 30-day ginger wine has been a family favourite for years and is known for its gentle heat, citrusy brightness and festive spice.

The best part is that this recipe needs no fancy equipment. A clean ceramic or glass jar, a bit of patience and a stir every day are all it takes. By the end of the month, you will have a fragrant, beautifully balanced wine that pairs perfectly with plum cake, Kerala snacks or a cosy December evening.

Ingredients
800 g ginger
1.6 kg sugar
2 Valencia oranges
2 limes
5 cloves
15 g yeast
4 litres water

Preparation
Crush the ginger and add it to four litres of water in a large pot
Add the sugar and stir to dissolve
Slice the oranges and drop them in
Squeeze in the juice of both limes and add the cloves
Bring the mixture to a boil and let it simmer for 30 minutes
Switch off the heat and allow it to cool completely
Once cooled, add the yeast and mix well
Pour this liquid into a clean ceramic or glass jar
Cover the mouth of the jar with a cloth and tie it securely
For the next 15 days, open the jar once a day, give the mixture a good stir and cover it again
This helps the fermentation process develop flavour evenly
After 15 days, stop stirring
Seal the jar airtight and leave it for upto 15 days
During this period the sediments will settle at the bottom while the wine clears on top
Once the wine has matured, gently ladle out the clear liquid from the top without disturbing the sediments
Transfer it to clean tinted glass bottles.
