From April 1, eggs sold in Uttar Pradesh should have their two dates - the date of laying and expiry date - stamped on them. The state government is bringing in a rule to ensure customers can check the freshness of an egg before purchasing it. And mind it, the date should be on the egg shell, not the carton or packaging of the egg. Meanwhile, how long is an egg at room temperature safe to use after laying? And, can it be stored in a healthy manner for a longer time? Here's what the Food Safety and Standards Authority of India (FSSAI) says:

1) At room temperature, eggs can be fresh for up to 12 days. However, if the room temperature is high, the shelf life can be reduced.
2) If you are purchasing eggs from a shop, store them in your refrigerator's main body (not the door) at less than 5°C, in the egg crates. If these eggs are clean, have no cracks and are stored properly, they can stay fresh for up to 5 weeks from the time of laying. Buy eggs only from stores that keep them at cooler temperatures or are well-ventilated.

According to the FSSAI, even eggs that have salmonella can smell and taste fine! Also, they recommend not washing eggs as this makes them porous. It's apparently better to discard eggs with any kind of dirt on their shells.
What is healthier? Cooked or raw egg?
Cooking does not reduce the amount of protein or nutrients in an egg, and, what's more, it makes it safer to consume, says the FSSAI. Raw eggs increase the risk of Salmonella infection. It's best to eat cooked eggs, in which the egg white is firm, and the yolk is thick.
