Lunch box idea: Potato rice

Most of the kids will be bored if they are given the usual rice with curries for lunch. Here is the recipe of potato rice that can make your kid happy.

Ingredients
2 cups cooked basmati rice
1 onion
1 potato
¼ tsp ginger (chopped)
½ tsp garlic (chopped)
½ tsp green chillies (chopped)
1 ½ tbsp coconut oil
1 tsp mustard seeds
¼ tsp cumin
¼ tsp turmeric powder
½ tsp chilli powder
¼ tsp coriander powder
¼ tsp cumin powder
1 tbsp lemon juice
Curry leaves as required
Coriander leaves as required
Salt as required

Preparation
Boil water in a large vessel with some salt in it. Add 2 cups basmati rice into it and cook. Drain the rice after it has cooked well.
Heat oil in a pan and splutter mustard and cumin seeds.
Into it add ginger, garlic, curry leaves, green chillies and onion. Sauté well.
Now add the potato pieces, turmeric powder, chilli powder, coriander powder and cumin powder.
Sauté until the raw smell of the masala powders are off.
Add the lemon juice and the cooked basmati rice.
Mix everything well together.
For more flavour, mix in the coriander leaves when the rice is still hot.
