Malpoora kheer: A North Indian delicacy

Malpoora is a pancake served as a dessert and is popular in Rajasthan and Uttar Pradesh. Here is the recipe of malpoora kheer to try at home. It is best accompanied by tempered chillies and mango jeera chutney.

Ingredients
For poora batter
1 cup sooji
3 tbsp Aashirvaad Atta
½ cup sugar
1 cup Aashirvaad Svasti milk
½ tsp green cardamom powder
1 tbsp whole fennel seeds
2 tbsp curd
For frying
½ cup Aashirvaad ghee
For kheer
500 ml milk
3 tbsp sugar
¾ cup rice
1 tsp green cardamom powder
2 tsp pista sliver
2 strands saffron
2 tsp raisin
15 ml ghee

Preparation
For poora batter
Add in all the ingredients and mix well.
Keep it aside and let it rest for 1 hour or till the semolina is soaked well
For frying
In a pan, heat ghee.
Drop poora batter in hot ghee.
Deep fry till golden brown on the edges
Remove and drain oil.
For kheer
Soak rice for 20 mins.
In a heavy bottom pan, add milk and heat.
Add rice to the milk and cook until thick and rice soft.
In a separate pan, heat ghee.
Add dry fruits and gently fry the dry fruits.
Add the sugar and dry fruit to milk.
Add in cardamom powder and saffron.
Serve hot along with kheer
