Muringakka thoran: An easy-to-make neighbourhood super food for lunch

Google 'moringa' and you will get a truckload of information on how it's a superfood and every part of the plant is rich with a variety of nutrients.

For an average Keralite, it is the humble 'muringakka' aka drumstick that's easily available in our premises and a regular item in traditional kitchens. Health experts laud drumstick for its vitamin C and antioxidant content, essential micronutrients like niacin, vitamin B12, its ability to avert gastric problems and more.

What about making a 'thoran' or stir fry with it, that's also delicious, for lunch today? Make sure you scoop out the flesh of the drumstick to prepare this 'thoran.' Here's the recipe:

Ingredients
1 cup drumstick flesh
¾ cup grated coconut
½ cup shallots/ onions (finely chopped)
¼ tsp turmeric powder
3 sprigs curry leaves
2 garlic cloves
Oil, mustard seeds and salt as required

Preparation
Scoop out the flesh from the drumstick (you could also scrape off the skin and then cut into small pieces)
Mix grated coconut, shallots, green chilies, curry leaves, garlic, turmeric powder and salt
Add this into the drumstick flesh
Mix well
Heat oil in a pan
Splutter mustard seeds
Add the drumstick – coconut mixture
Add salt as required
Cook well.
