Potato omelette

Potato Omelette

Wonderfully sunlit omelettes with the additional flavour of potatoes. A breakfast to wake up for!

Ingredients
4 eggs
Salt and pepper, as required
2 big tsp, olive oil
1 cup, grated potato

Preparation
Separate the egg white and yolk
Beat the egg white, and once it becomes a fine lather, add the yolk and beat it well again. Add salt and pepper into this
Take a pan and heat oil in it. Spread the beaten eggs into this pan. Add the grated potato on top of this.
Cook this on low flame
The bottom part of the omelette must be brown in colour and upper part must set well. This will take approximately 10 minutes
Remove the pan from the stove, and take a flat plate. Close the omelette with the plate, flip the pan and let the omelette pass over to the plate
Slide the omelette from the plate, and slowly place it on the pan (potato side beneath), and cook it for another 5-10 minutes
When it becomes brown in colour, remove it from the stove. Serve it hot
