Chicken avial is an extremely delicious dish which has the goodness of both chicken and vegetables. Green chillies are used in it for the right amount of heat. Though any vegetable of your choice can be added in this avial, it is better to avoid raw plantains. Check out the recipe of easy chicken avial:

Ingredients
200 gms chicken
¼ tsp turmeric powder
1 tsp salt
100 gms ash gourd
100 gms cluster beans
150 gms yam
1 coconut (grated)
5 green chillies
2 tbsp sour curd
Curry leaves
1 tsp coconut oil
½ cup water

Preparation
Cook the chicken with turmeric powder and half teaspoon salt and water. It would only take 6 -7 minutes for the chicken to be cooked well
In a separate vessel, cook the ash gourd, cluster beans and yam with half tea spoon salt, with the lid on. Do not add water in it
Cook the vegetables for at least 10 minutes on simmer
Into it add the cooked chicken and cook for two minutes with the lid on
Crush the grated coconut and green chillies together, without adding water
Add this mixture into the chicken - vegetable mixture
Mix everything well together
Cook for five more minutes with the lid on
The coconut mixture would have mixed well with the chicken and vegetables by now
Into it add the sour curd and mix
Add the curry leaves and pour the coconut oil over the avial before taking it off the heat

Notes
Slice the chicken into long pieces. Chop the vegetables into thick cubes.
