Mangalore fish curry

Fish curries have many local variations, depending upon the ingredients and the culinary cultures of the localities. Here is an amazing recipe of special Mangaluru style fish curry that is spicy and delicious.

Ingredients
½ kg fish (any fish of choice)
1 tsp oil
2 tsp coriander
1 tsp cumin
½ tsp fenugreek
½ tsp mustard seeds
5-8 dried chillies
Gooseberry sized ball of tamarind
¼ cup water
Few garlic cloves
2 bunches curry leaves
3 tsp oil
Salt as required
1 ¼ cups water

Preparation
Soak the tamarind in ¼ cup water for 15 minutes
Heat 1 teaspoon oil in a pan and roast coriander, fenugreek, cumin, mustard seeds and dried chillies
After this has cooled down a bit, grind it to smooth paste along with the soaked tamarind and some water
Heat 3 tsp oil in an earthen chatty and sauté the garlic
Add the masala paste and 1 tsp salt
Sauté on low flame until the oil begins to separate
Pour 1 ¼ cups water and boil well
After the gravy has boiled, add the cleaned fish pieces. Sardines are used in this recipe
Cook for 10-15 minutes on medium flame
Garnish with fresh curry leaves and take it off the flame.
