Plantain leaf halwa

During the lockdown, home cooks were busy experimenting with unique ingredients creating some interesting and mouth-watering dishes. Here is a unique recipe of plantain leaf halwa that tastes amazing and stands out for its bright green colour.

Ingredients
1 cup plantain juice (remove the fibres of half of a tender plantain leaf, cut it into small pieces and blend them with 1 cup water; pass the juice through a sieve)
6 -7 tbsp ghee
2 tbsp corn flour
1½ - 2 cups milk
Cashews and raisins as required
2 tsp cardamom powder
1 tsp dried ginger powder

Preparation
Heat 2 tbsp ghee in a pan
Roast the cashews and raisins; keep them aside to be used later
Now pour in the plantain leaf juice
Boil for 2 minutes
Mix milk and corn flour and add it into the plantain juice
Stir continuously
Meanwhile, add 1 tsp ghee
Add more ghee as it dissolves in the plantain juice mix
Add cardamom powder and dried ginger powder
Stir until the mix thickens up and begins to separate from the sides of the pan
Garnish with roasted cashews and raisins
Transfer the halwa mix into a dish
Allow it to set
Cut the plantain juice halwa into desired shapes.
