Fluffy karikku appam

Soft and fluffy appam that has tender coconut as a main ingredient tastes fabulous with spicy chicken or mutton curry. You could also enjoy the appam by soaking it in some coconut milk mixed with sugar. Here is the recipe of karikku appam.

Ingredients
1 cup raw rice
2 tender coconuts
1 cup tender coconut water
1 tbsp rice flour
¼ cup water
2 tbsp sugar
¼ tsp yeast
Salt as required

Preparation
Wash the raw rice and soak for at least 2 hours; you could also use kaima rice or basmati rice
Mix 1 tbsp rice flour in half cup water
Boil until it thicken up
You could also use 2 tbsp boiled rice instead of thickened rice flour
Add the soaked raw rice, thickened rice flour, tender coconut water, tender coconut flesh, sugar, yeast and salt in a mixer jar
Blend well
Keep the batter aside for at least 8 - 10 hours for it to rise
Heat a tawa and pour a ladle full of batter
Close the lid and cook for a minutes
Soft and delicious karikku appam is ready.
