Try this special ripe mango sambar

Here’s an interesting recipe of ripe mango sambar that can be enjoyed with rice or breakfast dishes like idli and dosa too.

Ingredients
5 ripe mangoes
5 tbsp grated coconut
1 ½ tbsp sambar powder
Lemon sized ball of tamarind (soaked)
2 small pieces jaggery
1 cup toor dal (boiled)
½ tsp mustard seeds
¼ tsp fenugreek seeds
2 dried chillies
A pinch of asafoetida powder
½ tsp turmeric powder
2 ½ tbsp coconut oil
Curry leaves
Salt as required

Preparation
First, peel the mangoes
Cook the mangoes with some water and turmeric powder
Heat coconut oil in a pan
Add the grated coconut and roast until brown in colour
Into it add the sambar powder
Roast for a minute before turning off the flame
Allow this mixture to cool down
Now, grind it well
Into the cooked mangoes, add the boiled toor dal, salt, tamarind water and curry leaves
Boil well
Add the jaggery piece and the coconut mixture too
Mix well
Heat oil in another pan
Splutter mustard seeds and fenugreek seeds
Roast the asafoetida powder and curry leaves
Add this fragrant tempering into the sambar
Give everything a good mix
Delicious mango sambar is ready.
