Tasty paneer net dosa

Paneer is a storehouse of protein and tastes amazing too. Here is an interesting recipe of paneer net dosa, that can be enjoyed as a filling breakfast or an evening snack.

Ingredients
¼ cup mint leaves
½ cup coriander leaves
2 cups grated coconut
2 green chillies
1 cup water
½ tsp salt
1 tsp sugar
1 ½ cups wheat flour
For the paneer gravy
400 gms paneer
2 tbsp butter
1 tbsp cumin
12 shallots
2 garlic
12-14 cashews
4 tomatoes (cut into pieces)
2 tsp chilli powder
1 ½ tsp coriander powder

Preparation
Grind the mint leaves, coriander leaves, coconut and green chillies by adding water
Strain this paste
Take 2 tbsp coconut oil in a bowl
Mix sugar and salt until they are melted
Now add this oil mixture and wheat flour into the coconut-mint paste
Add enough water too
Mix well into dosa batter
Heat butter in a pan
Sauté cumin, shallots, garlic and cashews
Add tomatoes
Sauté until they turn mushy
Grind this mixture into a fine paste in a mixer
Meanwhile, heat butter in another pan
Fry the paneer cubes
Mix the fried paneer in the gravy
Boil ¾ tsp salt in ¼ cup water
Poke holes on the cap of a plastic bottle
Fill the bottle with the dosa batter
Squeeze the batter into a greased dosa pan as thin crepes
Do not flip
Fold the crepe from both sides
Serve the paneer gravy in the centre
Delicious paneer crepes are ready.
