A Kerala favourite, aval vilayichathu is more of a teatime snack than a dessert. Puffed rice infused with jaggery, grated coconut and cardamom evokes nostalgia!

Ingredients

1¼ cup melted ghee


1½ cup coconut silvers

1½ cup sesame seeds
1 cup roasted gram
1-1½kg jaggery


3 cups water
4 coconuts, finely grated
1½ kg beaten rice
2 tsp cardamom powder

Preparation
Heat ghee in a pan. Lightly fry coconut slivers, sesame seeds and roasted gram. Set aside.
Dissolve jaggery in 3 cups water. Heat over low flame to make 6 cups syrup. Strain.
Bring this syrup to boil in a heavy vessel. Add grated coconut and cook over a low flame, stirring constantly till one -thread consistency is reached.
Remove from fire. Cool slightly and add the beaten rice. Mix well. Add the fried ingredients along with cardamom powder.
Mix and cool. Store in a dry container.
