Rainbow salads are those prepared with fruits and veggies in all colours on the rainbow. It is said that rainbow salads can even prevent cancer, decrease inflammation, improve vision, keep bones and teeth healthy and also help our skin glow. Add peanuts to it and you also get a dose of protein. Here's how to prepare a bowl of rainbow salad.

Ingredients
1 English cucumber
½ apple
5 small tomatoes
1 capsicum each in red, green and yellow colours
5 salad spinach
1 avocado
2 red cabbage leaves
½ cup crushed peanuts
For dressing:
2 tablespoons of lemon juice
2 tablespoons of olive oil
1 tablespoon of honey
1 teaspoon of mustard paste
3 numbers of garlic, finely chopped
½ teaspoon chilli powder
¼ teaspoon salt
One pinch of black salt
½ teaspoon coriander leaves, finely chopped

Preparation
Slice the cucumber, apple, tomatoes, spinach, capsicum, avocado and red cabbage and keep them aside
Mix the ingredients for dressing in a large bowl thoroughly
Add the sliced vegetables and fruits to the dressing and continue to mix
Spread the crushed peanuts over the contents in the bowl
The tasty and nutritious peanut salad can now be served
