Chena varathathu

Yam sliced in square pieces, spiced and fried the way coastal Kerala cooks fish. This is not only a lent season favourite, but also an apt dish to be served during the rains.

Ingredients
6-7 pieces of yam
4-5 shallots
4 garlic pods
1 inch piece of ginger
¼ tsp turmeric powder
½ tsp pepper powder
1 tbsp chilli powder
1 tsp vinegar

Preparation
Slice the yam into square pieces and keep aside
Grind together ginger, ginger, shallots, turmeric powder, red chilli powder, vinegar and pepper powder
Smear the yam slices with this paste
Pass them on to a pan, add ½ cup water
Keep closed in medium flame and let it cook
In ten minutes, take them out, and deep fry in oil
