Idiyappam

Try to resist these amazing rice string hoppers that are readily served from the quaint kitchens of Kerala. You would lose terribly!

Ingredients
1 cup rice flour, roasted
Salt to taste
¾ cup water, or as required
1 cup coconut, grated

Preparation
Put rice flour in a bowl and add salt
Bring water to a boil
Pour the boiling water slowly into the rice flour, stirring all the time to prevent the forming of lumps
Knead well to form soft, firm dough
Sprinkle a generous amount of scraped coconut on cut plantain leaf
Divide the dough into small portions
Press each portion through an idiyappam maker onto the leaf
Steam in idli moulds for 7 to 10 minutes
Garnish with grated coconut
Serve them with sweetened coconut milk or any meat or vegetable stew

Notes
You will need an Idiyappam Press and Idli moulds to make this dish.
