Pavakka puliyinji

Puliyinji is a traditional dish that is sweet, spicy and sour. Check out how to prepare tasty puliyinji using bitter gourd.

Ingredients
1 bitter gourd
150 gms tamarinds
6 tbsp coconut oil
1 small cup ginger (finely chopped)
10 green chillies
Curry leaves as required
2 pieces jaggery
¼ tbsp turmeric powder
½ tbsp chilli powder
¼ tsp asafoetida powder
1 tsp mustard seeds
5 red chillies
Fenugreek powder
Salt as required

Preparation
Soak the tamarind in some hot water
Cut the bitter gourd into thin slices
Heat coconut oil in a pan
Fry the bitter gourd pieces in batches and set them aside
Meanwhile, heat 3 tbsp coconut oil in another pan
Sauté ginger, green chillies and curry leaves
Into it add the tamarind water
Add salt only after the gravy begins to bubble rapidly
Now add the fried bitter gourd pieces
Add a few curry leaves too
Let the curry boil nicely
Add the jaggery and boil until the gravy thickens up
Into it add turmeric powder, chilli powder and asafoetida powder
Mix well and turn off the flame
Heat 3 tbsp coconut oil in pan and splutter mustard seeds
Roast the red chillies and curry leaves
Add this tempering into the dish
Add some fenugreek powder too
Give everything a good mix
Keep the dish in the same vessel for up to 4 -5 hours
You could then transfer puliyinji into glass jars and store in dry place.
