Mani kozhukatta

Mani kozhukatta is a delicious dish that could be enjoyed for breakfast or as an evening snack. The bananas and the raw rice are storehouses of protein and energy, making mani kozhukatta the perfect snack for kids. Here is the recipe for mani kozhukatta.

Ingredients
1 cup raw rice
2 big bananas
200 gms jaggery
2 cardamom pods
1 tbsp ghee
¼ tsp salt
1 cup grated coconut

Preparation
Wash the raw rice and soak for at least 2 hours
Melt the jaggery in 14 cup water
Grind the soaked raw rice, jaggery syrup, bananas and cardamom in a mixer jar into loose batter
In a thick bottomed vessel, mix the batter with ghee and salt
Stir continuously over medium flame until the batter thickens
Keep aside for 10 minutes to cool down the batter
After the batter has cooled down, add grated coconut
Mix well
Rub some ghee on your palms
Make small balls from the batter
Spread a plantain leaf in an idli steamer
Add the batter balls
Cook in steam for 15 minutes
Tasty mani kozhukatta is ready.
