Kids' Cooking | Penne arrabiata

The term arrabiata translates to “angry”, get the hint? It just tells you how fiery this delicious penne pasta dish is. This soft and cooked penne pasta covered in tangy and spicy red sauce made of tomatoes, garlic and chili flakes is an easy and quick dinner that goes well with garlic bread.

Ingredients
400gm dried penne pasta
800g diced tomatoes
1 onion chopped
½ cup basil leaves
Salt, as required
Pepper powder, as required
2 tsp caster sugar
1 tsp chili flakes (or to taste)
5/6 garlic cloves
½ cup veg stock
½ cup tomato puree
1/3 cup extra virgin olive oil

Preparation
Saute onions and garlic in olive oil
When the onions are soft and cooked, add diced tomatoes, tomato puree, stock, chili flakes and basil leaves
Mix well and allow it to cook
When the tomatoes are cooked, allow it to thicken while on simmer
Adjust the flavors by adding caster sugar, salt and pepper
Meanwhile cook the pasta as directed behind the pasta packet
Add the cooked pasta to the red sauce and mix well
Add some more basil leaves
Add in some water if the sauce is too thick
Serve with garlic bread
