Vishu kanji: A traditional rice porridge

With vacation time and Vishu coming together, this is the right time to introduce new dishes to the kids. How about trying Vishu kanji, a popular dish in Palakkad? Here's the recipe:

Ingredients
2 cups rice
First extract of coconut milk
Second extract of coconut milk
Third extract of coconut milk
1/4 cup green gram
1/4 cup puliyavara/butter beans
1/4 cup grated coconut

Preparation
Wash and strain rice
Cook the rice. After one whistle, switch of the gas.
Add third extract of coconut milk
Wait for one more whistle
Fry green gram lightly till it becomes brown in colour
Also fry the puliyavara/butter beans till its smell lingers
Blend the fried green gram and puliyavara into a powdered form
Now add the second extract of coconut milk to the rice
Mix the green gram and butter beans powder to it
Let it boil for 5 minutes
Add the grated coconut and mix it well
Add the first extract of milk and cook for 2 minutes
Add salt when serving
Kids will also like if sugar is added to it.

Notes
Vishu kanji is best served with chakka puzhukku.
