Authentic Kerala crab roast

To be treated to a plate of Kerala's crab roast is an out-of-the-world culinary experience. It takes a bit of expertise and a lot of interest to work out a dish to perfection.

Ingredients
500 gm crab
1 tbsp chilli powder
1 tsp turmeric powder
1 tsp pepper powder
1 tsp salt
Lemon extract
Oil
1 tbsp methi (fenugreek)
1 tsp mustard
2 red chillies
3 sprig curry leaves
1 cup onions (chopped)
1 tsp salt
1 tbsp garlic (chopped finely)
1 tbsp ginger chopped lengthwise
1 tsp red chilli powder
1 tsp turmeric powder
1 tsp coriander powder
1 tsp crushed red chillies
3 green chillies (finely chopped)
1 cup tomatoes (finely chopped)
1 cup coconut milk

Preparation
Mix chilly powder, turmeric powder, pepper powder, salt, and extract from half a lemon to the cleaned crab
Heat oil and fry the crab
Heat oil in another pan
Allow the fenugreek and mustard to splutter
Sauté red chillies and curry leaves
Add in onions, salt, garlic, ginger and sauté well
Mix again with chilli powder, turmeric powder, coriander powder, finely chopped green chillies, and tomato
Add required quantity of water and boil
Add in the fried pieces of crab and mix with the coconut oil and allow it to simmer
Allow gravy to thicken
Crab roast can now be served
