Indulge in the tropical delight of homemade coconut popsicles. This simple recipe combines creamy coconut milk with a hint of sweetness for a refreshing frozen treat that's perfect for hot summer days.

1 ½ cup thick coconut milk
1/4 cup sweetened condensed milk
1/2 teaspoon vanilla extract
Shredded coconut flakes, for texture

In a mixing bowl, combine the thick coconut milk, sweetened condensed milk, and vanilla extract
Stir well until the mixture is smooth and thoroughly combined
If desired, add a handful of shredded coconut flakes to the mixture for added texture and flavour
Carefully pour the coconut mixture into popsicle molds, leaving a small space at the top for expansion
If using traditional popsicle molds, insert popsicle sticks into the center of each mold
Place the filled popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid
Once the coconut popsicles are fully frozen, remove them from the freezer
To release the popsicles from the molds, run the molds under warm water for a few seconds to loosen them
Serve the homemade coconut popsicles immediately and enjoy the creamy, tropical flavor!

Note: These homemade coconut popsicles can be stored in the freezer for up to 2 weeks. If you prefer a lighter version, you can use light coconut milk instead of thick coconut milk. Additionally, feel free to customize the recipe by adding fresh fruit chunks or other flavourings to the mixture before freezing
