Madhura curry is a local dish which has the perfect sweetness and spiciness.
Ingredients
1 big sweet potato (cubed)
1 piece pumpkin (cubed)
1 cup grapes
1/4 cup curd
1 cup first extract of coconut milk
1 cup second extract of coconut milk
5 green chillies (crushed)
1 tbsp ginger-garlic paste
4 tbsp coconut oil
2 tbsp fresh coconut oil
Salt as required
Preparation
Heat oil in a pan
Add crushed green chillies and ginger-garlic paste
Sauté well
Add the second extract of coconut milk and salt as required
Add cubed sweet potatoes and pumpkin
When it is half cooked, add the grapes
When this mixture boils, add the first extract of coconut milk, and curd
Mix well
Pour fresh coconut oil over the dish and turn off the flame
It is a dish served for the traditional Kerala sadya (feast).
