Christmas special recipe | Boston cream pie

Boston cream pie is a soft, fluffy butter cake with pastry cream filling and topped with dark chocolate glaze. This delicious cake would be the perfect dessert to end the Christmas feast on a 'sweet' note. The cake is said to have been first created in the 19th century by a French chef at a hotel in Boston.  

Ingredients
For the pastry cream:
¼ cup sugar
3 egg yolks
All purpose flour in 8:1 ratio
3 tbsp corn flour
1 ¼ cup milk
1 tsp vanilla essence
For the butter cake:
5 eggs
3 tbsp milk
2 tbsp unsalted butter
¾ cup sugar
½ tsp vanilla essence
½ cup all purpose flour
1 ½ tsp baking powder
¼ tsp salt
For the dark chocolate glaze:
120 gms dark chocolate (crumbled)
½ cup whipping cream
1 tbsp butter

Preparation
Pre-heat the oven to 180°C
In a big bowl add sugar, egg yolks, all purpose flour and corn flour
Beat well until the mixture turns soft
Heat the milk in a sauce pan
Add the milk into the previously prepared mixture and stir continuously
Transfer this into a sauce pan and boil on medium flame until the mixture thickens
Take it off the heat and add vanilla essence
Mix well. This is the pastry cream
For the sponge cake, separate the yolks and whites of 3 eggs
Add the remaining 2 eggs into the yolks and beat well
In a bowl add milk and butter
Stir until the butter melts in double boiling method
Add ½ cup of sugar into the beaten yolk - egg mixture
Beat rapidly using a hand mixture until it rises and turns soft
Add the vanilla essence and beat 
In another bowl beat the egg whites well
Add the rest of the sugar into it and beat until the egg whites are firm and fluffy
Add this meringue gradually into the beaten egg €“ vanilla mixture
Fold it well
Add the milk-melted butter into it 
Stir slowly
Pour this batter into 2 greased cake tins
Bake for 18-20 minutes in the pre-heated oven
To make the dark chocolate glaze, boil the whipping cream and butter together
Pour this hot mixture over the crumbled chocolate 
Stir well until the chocolate melts
Place a cake on the cake tray
Spread the pastry cream on top of it
Place the second cake 
Pour the dark chocolate glaze over it
Decorate with fresh berries if required.
