Classic Indian Coffee House style masala dosa

Ingredients
½ kg potatoes
1 carrot
2 onions
1 beetroot
4 green chilies
1 tsp cumin seeds
1 tsp fennel seeds
3 tsp oil
1 tsp mustard seeds
3 red chillies
2 sprigs of curry leaves
2 tsp ginger
2 tsp garlic
1 tsp turmeric powder
3 tsp urad dal
1 ½ tsp salt

Preparation
Peel the potatoes and cut into quarters
Similarly, peel and cut the beetroot too
Cut the carrot and onion into small pieces
Cook them along with crushed ginger, garlic and some water in a pressure cooker for 2 whistles
Heat oil in a pan
Splutter the mustard seeds
Roast the red chillies, curry leaves, urad dal, fennel seeds and cumin seeds
Add the cooked veggies into this tempering
Mash well
Add enough salt and turmeric powder
Mix well
Add this colourful masala filling on top of the dosa
Fold the dosa and secure the filling
