Spicy and tangy, this garlic pickle is excellent for gut health too

The incredible health benefits of garlic were discovered as early as the Egyptian, Greek, Chinese and Roman civilizations. It is an excellent home remedy to boost immunity.

Pickling garlic in the Indian style is a delicious way to include them in your daily diet. This spicy garlic pickle could be enjoyed as a side dish with rice or chapathi. Besides, it is a healthy dish to pack in lunch boxes too. Do not forget to include garlic pickle in the lunch packets that you carry during journeys as it would keep away gastric problems or acidity. Ingredients
¼ kg garlic (cleaned)
¼ cup sesame oil
1 tsp turmeric powder
4 tbsp Kashmiri chilli powder
½ tsp mustard seeds
1 cup vinegar (boiled and cooled)
¼ tsp fenugreek and mustard powdered (toasted and powdered)
½ tsp roasted asafoetida powder

Preparation
Heat oil and sauté the garlic cloves
However, the garlic shouldn’t be overcooked
Keep them aside to be used later
In the same oil, roast turmeric powder, Kashmiri chilli powder and mustard
Into it add the vinegar and salt
Allow this mixture to boil
Add fried garlic and asafoetida powder when the oil separates
Mix well before turning off the flame
Store this is air tight glass jars; make sure to the jar at least until an inch below the mouth
There shouldn’t be any space between the pickle and the cap
If there isn’t a layer of oil on top of the pickle, heat some oil, cool it and pour over the pickle
Tasty and healthy garlic pickle is ready to serve.
