Garlic pickle without vinegar

Spicy garlic pickle is loaded with flavours and tastes amazing with rice, chapathi, or roti. Here is an amazing recipe of garlic pickle in which vinegar isn't added.

Ingredients
Lemon sized tamarind ball
200 gms garlic
2.5 tbsp chilli powder
½ tsp fenugreek
½ tsp cumin
¼ tsp turmeric powder
Sesame oil
Salt

Preparation
Boil the tamarind in half cup water. After it has cooled down, separate the tamarind extract.
Peel and wash the garlic cloves.
Into a blender jar add half of the garlic cloves (100 gms), chilli powder and warm water.
Blend it into smooth paste.
Add the garlic paste into the tamarind extract and mix well.
Dry roast the fenugreek and cumin. Grind them into fine powder.
Heat sesame oil in a wok and fry the rest of the garlic cloves. Keep them aside.
Splutter some mustard seeds in the same oil.
Add the tamarind - garlic paste into it and sauté well.
Add turmeric powder and salt as required. Mix well.
Cook this mixture for a while until the water reduces.
Into it add the fenugreek powder, cumin powder and fried garlic cloves. Mix well.
Cook until the pickle has a thick consistency.
