This green dosa is stuffed with the active ingredients in green gram. It is also stuffed with a neat mix of sprouts, egg white and sun-dried tomatoes.
Ingredients
250gm green gram dal
50gm raw rice
2 green chilli
10gm ginger
15gm garlic
10gm jeera, whole
5gm turmeric powder
Salt, as required
For the filling
1 egg white
10gm sprouts
10gm assorted bell pepper, chopped
20gm sun-dried tomato
Preparation
Soak green gram dal and rice together for three hours
Grind with green chillies, ginger, garlic, jeera and turmeric powder to a fine batter
Add salt to the batter
Spread this mixture thinly on a heated and greased dosa pan
There is no need for the batter to ferment to make pesarattu
To make the filling
Whisk the egg white and add the sprouts, sun-dried tomatoes and peppers
Spread the egg mixture in the centre of the dosa and roll it
Relish with chutneys
