Thalipeeth: A multigrain high-protein breakfast for Monday morning

If you want to start the week on a healthy note, try making a savoury, Maharashtran-style multigrain flatbread for breakfast today. Thalipeeth, a traditional dish, is made by combining flours like jowar, bajra, wheat, and gram flour with spices, chopped veggies, herbs, and the like. Jowar and bajra flours are available in our supermarkets these days and the rest of the ingredients can be found in our kitchens easily. Serve thalipeeth with some curd or pickle and you won't crave anything unhealthy till your next meal. Here's the recipe:

Ingredients
¼ cup whole wheat flour
½ cup jowar flour
¼ cup bajra flour
¼ tsp turmeric powder
½ tsp cumin seeds
2 tbsp gram flour
1 small, finely chopped onion
1 small, finely chopped tomato
¼ cup coriander leaves
1 finely chopped green chilly
Ghee
Water
Salt

Preparation
Combine wheat, jowar, bajra, onion, tomato, green chilli, coriander leaves, turmeric powder, gram flour, cumin seeds, and salt in a bowl
Add water, knead the mix into a soft dough with a chapathy-like consistency
Divide dough into 5 portions, shape each into balls
Pat the balls to form round discs using a little water on the fingers to prevent sticking
Heat a pan and once hot, cook the thalipeeth on it drizzling some ghee around its edges
Both sides should be golden brown
Serve with pickle, chutney, or yoghurt
