Porotta made of rice? Whip out soft and flaky porotta using leftover 'choru'

Porotta could probably start a food religion in Kerala. The flaky, round bread is so beloved that during the COVID-19-induced lockdown, porotta lovers even took it to social media to whine about missing their favourite food item.

Soft and flaky porotta with spicy beef curry is a match made in culinary heaven. Interestingly, there are hundreds of varieties of porotta in Kerala. The latest addition to the list is a tasty and soft porotta made using cooked rice. The recipe for this porotta was shared on an Instagram page called Ayesha’s Kitchen. Here is how to prepare it.

Ingredients
1 cup cooked rice
½ cup water
Salt as required
2 cups all-purpose flour
1 tbsp sunflower oil

Preparation
Blend rice, salt and water in a mixer jar
Into it, add all-purpose flour
Mix well
Add sunflower oil in order to make the dough softer
Keep the dough aside for at least half an hour
Make small balls from the dough and roll into thin sheet
Fold the dough sheet a few times and roll them
Brush sunflower oil between each layer
Cook the porotta on a hot pan
Make sure to flip regularly as it might easily get burned
Rice porotta is softer than regular porotta
Enjoy hot rice porotta with thick chicken kurma or spicy chicken curry.
