Easy chocolate cake in idli maker

It was during the 1880 Christmas season that the first cake in Kerala was made at the Mambally Royal Biscuit Factory in Thalassery. The unique recipe that came all the way from Victorian England has now conquered the taste buds of Keralites, making it an unavoidable part of the Christmas celebrations.

However, not many know that a super soft and delicious chocolate cake could be easily made without an oven. The cake is made in an idli steamer that is commonly found in most households. Besides, the batter for this cake is not mixed using an electric beater but in a regular mixer jar. You could even turn this chocolate cake into a multi layered blackforest cake. Ingredients
1 cup all-purpose flour
3 eggs
¼ cup chocolate powder
¾ cup sugar
¾ tbsp baking powder
½ tbsp baking soda
½ cup sunflower oil
2 tsp yoghurt

Preparation
In a dry steamer, spread some salt
Place a stand over it
Pre heat the steamer on medium flame for at least 10 minutes
Sift the all-purpose flour, chocolate powder, baking powder and baking soda into a mixing bowl (These dry ingredients would mix better if passed through the sieve a few times)
Beat the eggs well in a mixer jar
Into it add powdered sugar and mix well
Now add the sunflower oil and yoghurt 
Mix for 1½  more minutes in the mixer
Into this mixture add the dry ingredients in small amounts 
Mix well using a spatula
You could also use a hand mixer to mix the batter
Grease a cake tin with oil or butter
Spread an aluminium foil or butter paper
You could even grease this to take out the cake easily after it is cooked
Pour the cake batter into the tray
Gently tap it to remove any air bubbles
Now, slowly insert the tray into the pre heated steamer and close the lid
You could place a heavy object above it to secure the lid
Bake the cake on medium flame for at least 30-40 minutes
Take out the cake and allow it to cool
Cut the chocolate cake only after it has cooled down completely
To prepare the black forest cake, cut the baked cake into two or three layers
Pour some simple syrup over these layers to soften and sweeten them
Arrange the cake by spreading whipping cream between the layers
Decorate with chocolate shavings and plump cherries.
