Barnyard millet or samak rice, which is also known as samo, samvat and varai is often used to prepare kichdi, kheer and more during the Navaratri festival. The millet is often hailed as an ideal weight-loss ingredient that can be included in our diet. You can prepare a simple, yummy kheer with samak rice if you are planning to celebrate the nine-day festival. Here's the recipe:

3 cups of samak rice
12 cashews
20-25 raisins
5 small cardamom
1/2 cups of sugar

Preparation
Wash samak rice well and soak it for half an hour
Boil milk in a heavy pan
Once it boils, add the rice and stir well
Keep stirring every 3 or 4 minutes, taking the spoon deep into the pan
Once the rice is tender, add cashews and raisins
Cook till the rice gets a thick consistency
Add sugar, and mix well
Grind a few cardamom seeds and add it
Serve hot, garnishing it with the rest of the cardamom seeds
