Mango cake

No true lover of desserts can resist a delicious and moist cake with the classic mango flavour. Check out the recipe for mango cake that can be the centrepiece of any celebration.

4 eggs
¾ cup sugar
½ tsp vanilla essence
20 gm butter
1 cup all-purpose flour
½ tsp baking powder
¼ tsp baking soda
2 mangoes
1 tsp gelatin
2 cups whipping cream
2 tbsp icing sugar

Take the eggs and sugar in a bowl 
Mix them by double boiling
Stir continuously so that the eggs won't be cooked
Stir until the sugar dissolves completely
Keep stirring for some more time even after taking it off the flame
Sift the all purpose flour, baking powder and baking soda twice or thrice
Beat the eggs-sugar mix after it has cooled down completely
Add the vanilla essence and beat well until the egg mixture is firm
Now add the sifted dry ingredients slowly
Fold well
Add the butter and fold
Grease a hot vessel or pan with oil 
Pour in the batter 
Bake on high flame for the first two minutes and 20-25 minutes on low flame
Add the icing sugar and ½ tsp vanilla essence into the whipping cream
Beat well
Cut the cake into two or three layers
Spread the whipping cream on the base layer
Place a few pieces of ripe mangoes over it
Spread the whipping cream again
Repeat the layers
Finally cover the entire cake with the whipping cream
To prepare the mango puree, blend 1 cup ripe mango pieces with 2 tsp sugar
Add melted gelatin into it
Boil on low flame until the puree thickens up
Pour the mango puree over the cake after it has cooled down completely
Allow the cake to set nicely before cutting it into pieces.
