Tomato kadanjathu: A unique dish that pairs well with rice or chapathi

Tomato kadanjathu may sound strange but it is a delicious dish that could be enjoyed with rice, dosa, idli or with chapathi, roti or appam. Tomatoes are filled with an antioxidant called Iycopene, calcium, potassium beta-carotene, vitamin C and K and folate, alongside other nutrients. Experts say that tomatoes release more Iycopene, which fights cancer, when it is cooked. Here is the delicious recipe.

Ingredients
2 tomatoes
2 onions
10 shallots
3 green chilies
Some curry leaves
Salt as required
¼ tsp turmeric powder
1 tsp chilli powder
1 tsp coconut oil
¼ tsp mustard seeds
¼ tsp fenugreek seeds
2 red chillies

Preparation
Take the tomatoes, onions, shallots, green chillies, salt, turmeric powder, chilli powder, curry leaves and some water in a pressure cooker
Cook until three or four whistles
Allow the gravy to boil
For the tempering, heat coconut oil in a pan
Splutter mustard seeds and fenugreek seeds
Sauté curry leaves and red chillies
Pour this tempering into the curry
Mix well
Enjoy hot and sour tomato kadanjathu with rice, dosa, idli or chapathi.
