Every home has its version of tomato – onion curry, which is a go-to preparation on a busy day or when you don't have many veggies on your pantry. But if you are not sure how to make a delicious version of it, we are here to help. Not only is this curry spicy enough to pair well with rice, dosa and more, it's also surprisingly simple. Here's the recipe

Ingredients
1 tbsp coconut oil
¼ tsp mustard seeds
1 onion (chopped)
1 tsp ginger
1 tsp garlic
2 green chillies
Curry leaves as required
Salt as required
½ - 1 medium sized tomato
¼ tsp turmeric powder
½ tsp chilli powder
½ cup hot water

Preparation
Heat coconut oil in a pan
Splutter mustard seeds
Sauté onion, ginger, garlic, green chilies, curry leaves and salt
Lower the flame and cook until the onions are soft
Into it add turmeric powder and chili powder
Sauté until the raw smell is gone
Add tomato and mix well
Close the lid and cook until the tomato turns nice and mushy
Stir occasionally
Pour half cup hot water
Cook until the curry thickens to your preference.
